These matcha cordyceps bliss balls are so delicious they'll make your taste buds smile, but they also pack a calming energetic punch that can get you through any hike or even workout. Think a granola bar in green ball form :) Whip up these matcha cordyceps bliss balls, put them in the fridge for whenever you feel like an energetic snack!

What is Matcha Powder?

Matcha is essentially green tea powder. This green concentrated dust comes from the same plant as green tea. The only difference is that matcha leaves go through an additional process compared to green tea leaves which involves go being alternately covered and exposed to the sun throughout the day time. This actually makes the leaves naturally create more chlorophyll adding more health benefits and antioxidants to these leaves. During the spring, all the way through the summer, the matcha leaves are plucked then ground into a dense powder creating we know as matcha powder.

What is the difference between ceremonial grade matchaand culinary grade?

The difference between ceremonial and culinary grade matcha, is when the leaves are plucked. If in the Spring, at the height of when these matcha leaves are ripe, the matcha is considered ceremonial grade. The farther past this peak ripeness the worse the grade is eventually turning into culinary. The worse the nutritional content (including amount of antioxidants), color, and taste the matcha becomes. 

We, at HONE, use only the ripest matcha possible! We have found that ceremonial grade has the best flavor and the brightest most vibrant green color.

What are cordyceps?

Cordyceps are a functional mushroom that have some of the most amazing health benefits. These magical fungi increase the body's cellular energy by increasing ATP reproduction, they help with brain and cognitive function, are a liver cleanser and even help keep your gut healthy as a prebiotic!

When putting these fantastic fungi into this fantastic recipe, your body's energy levels will stay high for any activity you may take on! (Even the strenuous activity of snacking when you're working from home ;))

Matcha Cordyceps Bliss Balls Recipe

INGREDIENTS (makes 12 HONE Matcha Cordyceps Bliss Balls)

½ cup nuts (almonds, pecans…)
½ cup pitted dates
1 cup oats *gluten free if needed
2 teaspoons of HONE Matcha
Zest of a lime
Zest of half of a lemon
Juice of a lime
2 teaspoons vanilla extract
¼ teaspoon salt
Gluten free-vegan Graham crackers crumbs

INSTRUCTIONS :

1. In a food processor, combine all ingredients. Pulse until the dough forms a ball around the blade. If needed, add a little non-dairy milk.

2. With a 15 mL portion scoop, form 12 bite size balls.

3. Roll in Graham crackers crumbs or hemp seed.
